Refreshing Herbal Lemonade
Nothing says summer like a chilled glass of lemonade. It’s the perfect companion to barbecue, it’s bright and refreshing after a day in the hot sun and it’s so easy to make! This recipe is a fresh take on a classic favorite, with a grown-up twist- thyme! The flavor is smooth, bright, and the thyme gives it an incredibly refreshing quality. I have a feeling this Refreshing Herbal Lemonade could become a go-to for our household in the summer months! Here’s how to make it…
WHAT YOU NEED
1 1/2 c organic raw sugar
1 c filtered water
small bunch of thyme
2 c fresh lemon juice (about 10 lemons)
6 c cold water
*optional: a few sprigs of thyme & a sliced lemon for garnish

Make an herbal simple syrup
To a small pot, add the sugar, 1 cup of water, and thyme. Note: the more thyme you add the more savory the flavor, if you are wanting just a hint add a smaller amount. Heat on medium, stirring frequently, until all the sugar has dissolved and the color changes to light amber.

Pour the syrup through a fine-mesh strainer into a medium-sized bowl. Set in the fridge to cool (about 1-3 hours).

Press the lemons
You can use fresh lemons or organic lemon juice- up to you. If you are using fresh lemons, halve them, juice them then, strain out the pulp.

To a large pitcher, add lemon juice, your chilled herbal simple syrup, and 6 cups of cold water. Serve over ice, garnish with a sprig of thyme and a lemon slice, sip, and enjoy!
